Turkey Black bean Soup
-Make your own tureky broth by boiling a turkey (or Chicken) with white meat on the bones for 2-3 hours. Turn off heat and let cool.
-Seperate broth from meat/bones. Pull white meat off and chop.
-Add the turkey (or chicken) to the broth.
-Add the blackbeans and 3/4 cooked brown rice.
-Let heat over low heat for 1 hour.
-Add salt to taste.
-Serve in a bowl and top with avocado and hot sauce.
-Preheat Oven to 400.
-Cut spaghetti squash in half, season with basil, tumeric & crushed pepper.
-Turn face down in a casserole dish with 1/2 inch water and bake for 40 minutes.
-Once cooked, shred out 2 cups of squash with a fork for the soup.
-Cook quinoa as directed on package.
-WHILE the squash and quinoa are cooking, On low heat, in a large pot, combine soups, water, carrots, salt, ginger and tofu.
-Once cooked, add squash and quinoa and simmer on low heat for another 20-30 minutes. ENJOY!
Tofu Tortilla Soup
-heat broth in a large pot under medium heat...add onions and broccoli. Cook for 10 minutes.
-add carrots, tofu (and chicken) and spices. Cook for 10 minutes.
-add rice and quinoa. Cook for 10 minutes.
-add cilantro and juice of 1 lime. Cook for 5 minutes. Serve in a bowl with shredded cheese, lime wedge and avocado (optional). Enjoy!
Spicy Thai Coconut Bacon Soup
-Cook, peel and cut baby potatoes in advance.
-Spiral zucchini and yellow squash...then chop until spirals are about 1-2 inches long.
-In a large pot, over medium heat, saute garlic and olive oil for about 1-2 minutes.
-Add bacon (cut into nickel size pieces) and cook until slightly crispy...stirring often.
-Do Not Drain...add pork and cook over medium heat for about 5 minutes...stirring often.
-Add Bone broth & crushed red pepper. Stir well. Heat for about 5 minutes.
-Add Alfredo sauce and Coconut milk. Stir well. Heat for 10 minutes until well mixed.
-Add lemon zest, zucchini, squash and potatoes. Squeeze the juice from the 2 lemon halves into the soup mixture. Stir well and let cook for another 10 minutes.
Hearty Farro Turkey (Tofu) Stew
-Add Ginger soup to large pot on medium heat...fill container with 2 cups of water, shake and add to the soup. Stir until well mixed. Cook for 5 minutes on medium heat.
-Cook 10-Minute Farro as instructed.
-Add all ingredients and stir until well mixed.
-Cook for 10 minutes on medium heat.
-Add Farro and cook for an additional 15 minutes.
