Savory Cauliflower Stuffing
-Preheat oven to 350.
-Sauté carrots, onions & carrots with coconut oil... med-high heat for 5 mins.
-Add kale...sauté for 3 mins.
-Add cauliflower, salt and broth and simmer for 5 more minutes.
-Bake covered for 25 minutes.
Seasoned Shredded Chicken
-Place chicken breast in a pan with 1 cup broth...add garlic, onion & seasoning....and bring to boil...turning occasionally.
-Turn heat to medium and let simmer, covered for 15-20 minutes.
-Turn to low (adding additional broth) and let cook an additional 60 minutes (or until shreds with a fork).
-Remove from hit and let sit for 10 minutes.
-This is perfect for Taco bowls, chicken lettuce wraps, chicken & eggs, chicken & spaghetti squash saute, etc.
-Store unused chicken in a ziplock with the broth.
