2 Minute Easy Green Omelettes
Leftover Turkey Breakfast Casserole
-Preheat oven to 400.
-Use the coconut oil to grease the 8x8 pan.
-Layer the pan with turkey, then spinach, then mushrooms.
-Beat eggs with mild and sea salt.
-Pour egg mixture evenly over the layers.
-Bake uncovered for 35-40 minutes (or until lightly browned on top).
-Turn off oven and top with cheese if desired. Leave in oven an extra 5 minutes.
-Pull out of oven and let sit for 10 minutes.
Egg White Muffins
-Spray 6 cup muffin tin with coconut oil.
-Evenly distribute and layer the spinach, tomato, ham and onion in the cups.
-Top with liquid egg whites until 2/3 full.
-Bake at 350 degrees for 15-18 minutes.
2 Min Protein Breakfast in a Mug
-Scramble eggs and milk in a 12oz mug.
-Stir in sausage and spinach.
-Cook in Microwave (covered) on high for 30 second increments...4 times.
-Add cheese to top and cook on high for another 30 seconds.
-Stir and enjoy!!
Raspberry/Brown Sugar Overnight Oats
-combine all ingredients in a bowl (minus the raspberries and 1/2 of the pecans)
-put in a mason jar and securely close it
-put in the fridge and let sit overnight
-stir in the morning and top with pecans and raspberries
(no bake...vegan...gluten free)
-Line a bread pan with saran wrap. Set Aside.
-Add all ingredients to a food processor (except water).
-Process on high until crumbly and sticky mixture forms.
-Test mixture by trying to roll it into a 1" ball...if it sticks, then roll mixture into bite sizes. If it doesn't stick, add water and pulse into the mixture until it is sticky enough to hold together. Roll into bites and place in the saran wrapped pan.
-Place pan in the fridge for 1 hour or until slightly hardened.
-Pulse remaining coconut and almond in a blender for topping.
-After the mixture is slightly hardened, lift out the saran wrap. Roll your bites into the shredded coconut/almond topping and ENJOY!
